Corn Beef and Rice

Ingredients:

  • 1 can of corn beef
  • Oil 
  • A handful of cherry tomatoes 
  • 1 Onion
  • 1-5 Garlic Cloves (how many you like)
  • 1 Tbs Paprika 
  • Salt and Pepper
  • Add any seasonings you like!
  • 1 Cup of Rice
  • Corn 

How to Make:

  • Boil water and add the rice before starting to fry the corn beef and veg. 
  • Cut onion and garlic and fry with oil in a pan till golden brown.
  • Add corn beef, chop it up till it is minced.
  • Add seasonings. 
  • Cook till corn beef is cooked through. 
  • Add corn to the rice, stir it up. 
  • This is a recipe that can be changed and altered to anyones flavor or liking.
  • Add a fried egg on top, add some chilis to make this spicy!

 Fried Chicken and Macaroni Cheese

Ingredients:

Macaroni Cheese: 

  • 1/2 cup Butter
  • 1/2 cup Flour
  • 2 cups Milk
  • 1 cup Mature Cheddar Cheese and 1 cup any other cheese of your choice
  • Mushrooms
  • Chorizo
  • 1 Onion
  • 3 Garlic Cloves
  • 1 tbs Black pepper
  • Chives to taste
  • 1 pound of macaroni 
  1. Chop Onion and garlic and fry in a pan with butter till soft. 
  2. Chop Chorizo and Mushroom and fry with garlic and onion. 
  3. Add Butter and Flour, cook flour for a minute or until the ingredients are mixed together
  4. Gradually add small amounts of milk little by little to create the roux, pour milk, wait till the roux thickens each time before adding all of it.
  5. Once roux is thick, add cheese and seasonings.
  6. Add cooked macaroni, stir together. Add cheese on top. 
  7. Place in a baking dish for 10 minutes till golden brown and bubbling. 

Fried Chicken: 

Batter:

  • 3 eggs
  • 1 Cup Flour
  • Salt and Pepper
  • Paprika 
  • Chili Powder
  • Herbs to your liking
  • Chicken thighs, Chicken Breast and Wings
  1. Beat eggs in a bowl. 
  2. Place flour and seasonings in another bowl
  3. Dip the chicken in the gas and then in the flour batter 
  4. Heat oil to 200℃ and cook chicken for about 10 minutes or till crispy and golden brown
  5. Place on a baking pan and put in the oven for 30 minutes at 170℃. 
  6. Always check if chicken is cook through before serving!. 

 

Warwick - Chocolate Cake with Mocha Fudge Frosting

Ingredients: 

·      1 3⁄4 cups SR flour

·      2 level tablespoons cocoa

·      3 ozs melted butter

·      2 eggs

·      1 1⁄2 cups sugar

·      1 teaspoon bicarbonate of soda

·       1 cup milk

·      pinch of salt

Mix dry ingredients. Add melted butter and milk then beat for two minutes. Add the two beaten eggs and beat for a further two minutes. Divide mixture evenly between two buttered and lined 8” / 20cm sponge tins.

Bake at about 180° C for about half an hour. Test before removing from oven.

Mocha Fudge Frosting

·      2 ozs softened butter

·      2 teaspoons cocoa

·      1⁄2 teaspoon vanilla

·      4 ozs sifted icing sugar

·      1 teaspoon instant coffee

·      3 – 4 teaspoons hot water

Dissolve instant coffee in the hot water and then place all ingredients in a food processor, or similar. Process until a smooth consistency is obtained and then spread over the cake.

This is sufficient for one cake only.

John Phillip Sage - Porrusalda

Ingredients:

·      4 Leeks

·      3 Potatoes

·      2 Carrots

·      1 Butternut Squash (Or 1 little pumpkin)

·      Salt

·      Olive Oil (Not Necessary)

 

Method:

1.     Clean and cut the leeks into 1cm slives

2.     Trim and peal the carrots an the butternut squash

3.     Peal the potatoes and break them, do not cut.

4.     Pour water in the pot covering all the cut veggies.

5.     Add a spoonful of salt and some olive oil

6.     Bring the water to a boil

7.     After bringing the water to a boil, reduce the heal to low for 40 minutes.

8.     Done!

Shy - Slut Spaghetti / Pasta Puttanesca

Pasta Puttanesca

Serves 1 big portion or two medium portions

You will need…

  • ·      Some Spaghetti
  • ·      A tine of tomatoes (chopped)
  • ·      Some pilled black olives
  • ·      Some capers
  • ·      Some tinned anchovies in oil
  • ·      Some olive Oil
  • ·      Some Chili Flakes
  • ·      Garlic – Cloves or Puree
  •  

1)    Get about a half of tin of anchovies (probably a bit too much but I think the more the merrier) and chop them as small as you can.

2)    Put into a pan with a strong heat and mash them into a paste with the olive oil. (Maybe a spoonful – I use the oil from the tin)

3)    When the anchovies are all kind of dissolved, pour in the tomatoes and add 3 cloves of crushed garlic or the equivalent in puree

4)    Chop the olives and capers accordingly to your personal preference. (While you’re doing this you could put the kettle or pan on for the pasta water)

5)    Add Chili Flakes and seasoning to your liking.

6)    Boil the pasta and turn the heat down on the sauce.

7)    Combine the sauce and the pasta

8)    You might like to serve with rocket or parmesan or something if you’re not being a slattern

9)    That’s it!

Jonha - Farmhouse Pizza Dough

Farmhouse Pizza Dough

Ingriedients for Pizza Dough:

  • ·      1 Package Active Dry Yeast
  • ·      1 Cup Warm Water
  • ·      1 Teaspoon Sugar
  • ·      1 Teaspoon Salt
  • ·      2 Tablespoons Oil
  • ·      2 ½ Cups Flour

 

  • Disolve yeast in warm water and sugar. Stir in remaining ingriedients; knead dough for 1 minute adding a dusting of flour to the surface. The dough should not be sticky. (Add a small amount of flour to dough if too sticky) Let rest for 20 – 40 minutes.

Sprinkle cornmeal on the pizza stone or baking pan and spread evenly. Carefully spread dough out across the surface of the stone or pan. Lightly coat dough with olive oil, followed by minced garlic, cheese and any other toppings you have.

Bake in a 425℉/220℃ oven for 25 minutes till crust is golden.
